Zughetti Prawn Aglio Olio

~Zughetti Aglio Olio Udang

Assalamualaikum and Hello everyone!!

Zucchini is a type of summer squash, but in the culinary context it is treated as vegetable. Myself always mistaken it as cucumber, Japanese cucumber to be exact. The fact that zucchini is low in calorie make it a good replacement for dieting. Hundreds grams of fresh zucchini is contain approximately 17 food calories.

Zucchini-noodle, Zoodle, Zughetti
To make this zucchini noodle, you can use spiralizer but in my case, i just using julienne peeler.

Method:

  1. Clean the zucchini. Cut both end.
  2. By using the julienne peeler, go to the first edge and peel it downward to the other end until finally get like long match stick size noodle. Be careful not to cut your finger.
  3. Put some salt, and let the water came out.
  4. Toss the water.
  5. You can eat it raw or you can saute it with 1 tablespoon olive oil on medium heat pan for 3-5 minutes. The serve with any sauce you like.

Today I cooked this zucchini noodle as spaghetti so I called it Zughetti. I cooked it with Aglio Olio recipe.

Ingredients:

  • 1 cup Zucchini noodle- Zughetti cooked
  • 3 cloves garlic-minced
  • 1/3 cup carrot- julienne
  • 1/3 cup prawn
  • salt
  • black pepper
  • olive oil
Methods:
  1. Heat the frying pan, Put 2 table spoon olive oil
  2. Put in garlic and fry it until slightly brown.
  3. Then put in carrot and shrimp until it change colour.
  4. Later put in the zughetti and season it with salt and pepper. Cook for another 1-2 minutes.
  5. Now it ready to enjoy.

I hope you can try this recipe.

Eggplant Omelette

~ Omelet Terung

Assalamualaikum and Hello everyone!!

What for lunch tomorrow? As I'm planning my diet program, I search a lot of recipe and most important is healthy recipe. I try to incorporated a lot of veggie in my recipe and reduce my carbohydrate intake.

For tomorrow lunch, I decided to eat eggplant omelette and mixed veggie. I prefer to bring my home cook meal than buying out side. I can cut cost, cut your lunch hour time and further more you can control what you eat (i.e; oil, salt, sugar and seasoning).

Ingredients:

  • 1 Large eggplant
  • 2 eggs
  • 1 clove garlic
  • 1/2 Onion medium size
  • 1/3 capsicum medium size
  • Salt
  • Black pepper
  • Olive oil
Methods:
  1. Cover the eggplant with 1 teaspoon of olive oil. Make some hole by poking the skin with fork.
  2. Grill in Oven for 15 minutes at 200oC. Or you can  fire roast it for 10 minutes.

3. Carefully peel the charred skin from the eggplant.

4. In the large bowl. Beat 2 eggs with salt and pepper. Than mixed in together capsicum, onion and         garlic.
5. Submerge the whole eggplant. Originally, this recipe usually the keep the eggplant stem so that the     omelette will reshape the eggplant. But this time I cut it smaller a size of burger patty.

6. Heat the non-stick fry pan on the medium heat, put some olive oil to fry the omelette.
7. Lay the egg-soaked eggplant into the pan, then pour the rest of the beaten egg.
8. Once the eggplant is firm enough, fold the side over. keep for around 3 minutes until it brown and       cooked.

9. After both side are perfectly brown and cook. Removed it from the heat.
10. Enjoy it with ketchup, chilies or soy sauce.

It so simple and nice. I should put it in between toast and make a eggplant sandwich (maybe next time).

I hope you guys can try and enjoy my recipe.

Wassalam and Bye-bye.

~Cuka Epal dengan Madu dan Lemon

Assalamualaikum and Hello to everyone!!

Ingredients:
  • 2 tablespoon Apple Cider Vinegar
  • 1 tablespoon Honey
  • 1/4 lemon - juice

Serve hot of cold.

Very simple right. Enjoy it in the morning, before you eat your breakfast.

Yeah... food is essential to our body, but we need to choose it wisely.

A lot of people already know about the goodness of Apple Cider Vinegar. I just recently know about this GOOD NUTRITION, but it never to late to start, right!. There are a lot of Apple Cider Vinegar in the market. Make sure that you choose the one with the 'Mother'. It is the non purified and unfiltered apple cider. Organic unfiltered apple cider like Bragg's are the most common brand used. In Malaysia, you can fine this product at Jaya Grocer, but not all branch have this brand in hand. As long as the product is murky, and labeled with the 'Mother' it should be fine.

Health Benafit of Apple Cider Vinegar:

It also can benefit you at home as Non-toxic cleaner and Weed Killer.

However, this product is not miracle or "cure all' like some people believe. Take it in moderation. Other health benefit and information you can find it in this link http://bragg.com/products/bragg-organic-apple-cider-vinegar.html

I get this from my aunt. It was a medium size plastic bag full. We can make nice drink, the colour similar to Ribena. Yummy..

Remove the capsule from the flesh.

Put the flesh in the pot, put the equivalence of flesh: water, 1:2. turn on the heat cooked until boil, put in a simmer in medium high heat for around 30 minutes or boil until the water became half than before. Later, stain the flesh, then you can get very nice purple pink juice. (This without sugar, you can add sugar according to your preference.

Later, I will share my Roselle Lemonade Drink..

See you soon.

Assalamualaikum and Hello everyone!!

Today is the end of school holiday in Malaysia. I been requested by my little brother to make this dish. So today I make it before  sending him to his school. This actually a very simple recipe.

Popiah basically is a dish originate from China in Fujian Province. Nowadays there are many type and variety of popiah. (Maybe I can share it with you later). But for now, I will share u this recipe. Some people call it Japanese Roll (I don't know why... I thought sushi is Japanese Roll). basically it is crunchy because the vegetable is raw and there a present of the anchovy crumbs that make it more tastier.

Let's start:

Ingredients:
  • 1 large carrot, cut into match stick (about 1 1/2 cup)
  • 1/2 sengkuang, cut into match stick (about 1 1/2 cup)
  • 2 medium cucumber (remove the core) cut into match stick (about 1 1/2 cup)
  • 5 sheet of seaweed paper
  • 5 sheet of popiah wrapper
  • Mayonnaise
  • anchovy crumbs
You also need a bamboo mat (sushi roll bamboo mat)

To make the the anchovy crumbs
  • 4 tablespoon powdered anchovies
  • 1 cup rice flour
  • 1/3 cup custard flour
  • 1 egg
  • 1 cup water
  • salt
  • cooking oil
Methods (anchovy crumbs)
  1.  Mixed all ingredient until everything well blend together.
  2. Heat the cooking oil in the frying pan.
  3. By spoon, splash one spoon at times of the better on the heated oil. Don't make it too crowded. Fried it batch by batch.
  4. Cooked until golden brown.

Cucumber, sengkuang, Carrot,
Anchovy crumbs

This is the my favorite popiah wrapper, you can easily find it in Giant supermarket.

Methods:

Let's roll..
  1. Place a sheet of seaweed paper on the bamboo mat with the shiny part down.
  2. Layer the popiah wrapper on top of the seaweed paper.
  3. Place the cucumber, sengkuang, carrot and the anchovy in straight line at the center of the popiah wrapper.
  4. Put some mayonnaise on the filling.
  5. By using both hand, role the mat over so this center filling in the roll, in the middle.
  6. Grab the mat with both hands and press it tightly as you continue rolling.
  7. Put some mayonnaise at the end of seaweed paper so it act like a glue.
  8. Remove the role from the mat and continue to roll the rest.
  9. By using sharp knife, cut the role around 1 inch (because if it to thin, i can be a desaster :p)
  10. Put it on plate and serve it immediately or pack it.

I pack some for my little brother in a container. I hope his friends can enjoy this simple dish. ;)

I hope you can try this recipe.

* Please don't throw away the cucumber core, I will share with u what u can do with it.

Untuk memasak Quinoa ni sangat senang

1 Cawan Quinoa + 2 Cawan Air

Masak sehingga mendidih, kemudian kecilkan api, letak penutup dan masak selama 10-15minit. api tu kecil je tau.. takut nanti hangit pulak. Peringatan kepada diri sendiri ni..

Harini Mama Long nak masak

Quinoa Fried Kimchi - Quinoa Goreng Kimchi

Bahan-bahannya

1 cawan Kimchi - dengan jusnya sekali (resepi ni Mama Long dah post beberapa minggu lalu)
2 cawan Quinoa (yang sudah dimasak)
1 ulas bawang putin
1 biji bawang merah sederhana
1/4 cawan lobak merah (potong kecil)
1/4 cawan batang saderi (potong kecil)
1/2 cawan brokoli (potong kecil)
garam secukup rasa
gula secukup rasa
sedikit minyak untuk menumis

Cara-caranya
1. panaskan sedikit minyak.
3. Masukkan Kimchi, masak sehingga jusnya sedikit kering
4. Masukkan Quinoa
5. Gaul sehingga rata. Tambah garam atau gula mengikut citarasa anda.
(Mama Long tak tambah gula atau garam sebab diet la...)

OK.. boleh dihidang. kalau nak tambah telur pun boleh. Lagi sedap. Tapi Mama Long nak kurangkan jumlah kalori ni. Sekarang dan bole makan. YEAY!!

SELAMAT MENCUBA

Assalamualaikum...

Hmm... sekarang kan tengah demam-demam KOREA ni kan ... Mama Long Rasa nak mulakan jejak blog Mama Long ni ke KOREA la.. Manalah tau dapat jumpa "Teruna Kimchi".

Jadi resipi kali ni, KIMCHI..yum,,,yum...

Mama Long rasa memang dah banyak la orang post resepi Kimchi ni kan..Tapi tak pe... Sejak akhir-akhir ni Mama Long banyak buka youtube masakan.

Bahan-bahan:
Utama:
3kg Kobis China (Napa Cabbage)
1/2 cawan Garam

Bubur:
2 cawan air
2 sudu besar tepung beras pulut
2 sudu besar gula

Sayur-sayuran:
2 cawan lobak putih (potong seperti batang mancis)
1 cawan lobak merah (potong seperti batang mancis)
7-8 daun bawang , dicincang
1 cawan hirisan daun kucai (pilihan) ( jika tiada ganti :3 daun bawang , dicincang)

Bumbu/Rempah:
½ cawan bawang putih ( 24 bawang putih ulas) , cincang
2 sudu teh halia, cincang
1 bawang sederhana, cincang
½ cawan sos ikan
¼ cawan udang masin (cencalok) dicincang
2 cawan serbuk lada merah (kalau bole cari yang korea brand mmg untuk kimchi, lagi sedap)

Cara-caranya:
Pastikan kobis tadi besama garam sekurang-kurangnya 2 jam, setiap setengah jam mesti pusing2 kan dia.

2. campurkan bahan bubur dan masakkan diatas api sedehana sehingga tepung pulut masak dan berwarna lutsinar. kemudian sejukkan.

Tapi sebab Mama Long memang suka beli buku resepi, bila cuba tak jadi, Alahaiii... sedih kan? kadang-kadang barang2 pun susah nak dapat.. Lagi sedih...:(

Sebab tu Mama Long nak tulis blog ni denga harapan bole kongsi rahsia dan petua dengan semua. Kita bole belajar sama2.

Muah...Muah... Bye...Bye...
